I didn’t know the insides of a sea urchin are orange… does one need to be careful handling the urchins… they sting when alive 😦

With the outside prickers, yes. But they are only really bad if you step on them. With the right clippers you can cut them open relatively easily. The eggs taste quite good actually, if you like that kind of thing ;o)
